- 1/2 cup olive oil

- 1 cup arugula or shredded lettuce
- 4 slices provolone cheese (about 4 oz, optional)
- 1 tbsp butter or olive oil for toasting bread
Instructions
- Season the 2 lb short ribs with 1 tsp kosher salt and 1/2 tsp black pepper, then let them rest at room temperature for 20 minutes.
- Preheat the grill to medium-high heat and grill the short ribs for 25–35 minutes, turning occasionally until caramelized and tender. Adjust cooking time depending on thickness.
- Remove the grilled short ribs from the heat and allow them to rest for 10 minutes before slicing or shredding.
- Prepare the chimichurri by combining 1 cup parsley, 2 tbsp oregano, 4 minced garlic cloves, 1/2 tsp red pepper flakes, 1/2 cup olive oil, and 3 tbsp red wine vinegar in a bowl. Stir well and adjust seasoning if needed.
- Slice the ciabatta loaf lengthwise and lightly brush with 1 tbsp butter or olive oil.
- Toast the bread lightly on the grill or in the oven until crisp but not overly hard.
- Spread chimichurri generously over both sides of the bread.
- Layer sliced grilled short ribs evenly over the bread, followed by 1/4 cup sliced shallot or onion, 1 cup leafy greens, and 4 slices provolone cheese if using.
