This easy-to-make dish is perfect for weeknight dinners, meal prep, or family gatherings. It’s delicious, colorful, and full of healthy ingredients that will keep you coming back for more.

Ingredients

Scale
  • 1 lb ground turkey
  • 2 medium sweet potatoes, diced
  • 1 cup bell peppers, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a baking dish with olive oil.
  2. In a skillet over medium heat, sauté onions and bell peppers in olive oil for about 5 minutes, until softened.
  3. Add ground turkey to the skillet and cook for 7–10 minutes, breaking it up with a spatula until browned and no longer pink.
  4. Stir in diced sweet potatoes, minced garlic, cumin, paprika, chili powder, salt, and pepper. Cook for an additional 5 minutes, allowing the spices to coat the ingredients.
  5. Transfer the mixture to the prepared baking dish, spreading it evenly. Top with cheese if desired.
  6. Bake for 25–30 minutes, or until the top is golden and the sweet potatoes are tender.
  7. Let it rest for a few minutes before serving and enjoy!

Notes

  • Cut sweet potatoes into even chunks for uniform cooking.
  • Add extra garlic or adjust the spices to suit your taste.
  • Store leftovers in an airtight container in the fridge for up to 4 days.
  • Reheat in the oven at 350°F (175°C) for best results.
