Instructions

  1. Prepare the Ingredients: Dice the onion and celery, mince the garlic, slice the carrots, and halve the baby potatoes. Cut the chicken thighs into small, bite-sized pieces and toss them in half of the flour until evenly coated.
  2. Brown the Chicken: Heat the butter and olive oil in a large pot over medium heat. Once hot, add the floured chicken pieces and cook until browned on all sides. Avoid stirring too often to allow proper browning. Remove the chicken and set it aside.
  3. Sauté the Vegetables: In the same pot, add the onion, celery, garlic, and carrots. Stir frequently, scraping up any browned bits from the bottom of the pot. Let the vegetables cook until they begin to soften, about 5 minutes.
  4. Thicken the Base: Sprinkle the remaining flour over the vegetables and stir well to coat. Continue cooking for 2 more minutes to eliminate the raw flour taste. The flour will begin sticking to the bottom, which will help thicken the stew.
  5. Simmer the Stew: Return the browned chicken to the pot, then add the potatoes, dried herbs, black pepper, chicken broth, and vegetable broth. Stir everything together and bring to a boil. Reduce the heat to medium-low and let it simmer uncovered for about 30 minutes, stirring occasionally, until the potatoes are tender and the broth has thickened.
  6. Final Touches and Serving: Taste the stew and adjust seasoning if needed. Garnish with freshly chopped parsley for extra flavor. Serve warm with crusty bread or over rice for a complete meal.
