- 1 onion, chopped finely
- 2 cloves of garlic, crushed
- 1 large leek, sliced finely
- 2 sticks of celery, chopped
- 2 carrots, chopped
- 250g waxy potatoes, peeled and chopped into small cubes
- 1 litre vegetable or chicken stock
- 2 bay leaves
- 2 sprigs fresh thyme (or 1 teaspoon dried thyme)
- Optional: a pinch of chili flakes
- Salt and pepper to taste
- Fresh chopped parsley
- Cooking oil spray (e.g., avocado oil spray)
Instructions
- Spray a large saucepan with cooking oil and sauté the onions, garlic, and celery over medium heat for a couple of minutes until softened. Add a little stock to prevent burning.
- Add in the sliced leeks and chopped carrots, cooking for another 2 minutes while adding more stock to avoid sticking.
- Stir in the thyme, bay leaves, and chili flakes (if using). Add the potatoes and vegetable or chicken stock, then bring to a boil.
- Reduce heat, cover, and let simmer for about 45 minutes, or until all vegetables are tender.
- Blend part of the soup using a hand blender or transfer half to a traditional blender. Keep some chunks for texture or blend fully for a smooth soup.
- Season with salt and pepper to taste and garnish with fresh parsley before serving. Enjoy your hearty vegetable soup!
Notes
- For a vegan version, use vegetable stock instead of chicken stock.
- If you prefer a lower-carb option, swap potatoes with butternut squash or cauliflower.
