Description

Honey Roasted Carrots with Feta & Dill is a simple yet flavorful side dish that combines the natural sweetness of roasted carrots with the tangy richness of feta cheese and the freshness of dill. This dish is perfect for any meal, offering a sweet-savory balance that will satisfy both kids and adults alike.

Ingredients

  • Carrots: 1 lb
  • Honey: 3 tbsp
  • Olive Oil: 2 tbsp
  • Feta Cheese: 1/2 cup, crumbled
  • Fresh Dill: 2 tbsp, chopped
  • Salt: 1/2 tsp
  • Black Pepper: 1/4 tsp

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash and peel the carrots. Cut them into uniform pieces.
  3. In a large bowl, toss the carrots with olive oil, honey, salt, and black pepper until well-coated.
  4. Spread the carrots in a single layer on the prepared baking sheet.
  5. Roast for 25-30 minutes, flipping halfway through, until tender and caramelized.
  6. Remove from the oven and let them cool slightly. Top with crumbled feta cheese and fresh dill before serving.

Notes

  • Make sure the carrots are cut into uniform pieces for even cooking.
  • If you prefer a sweeter flavor, drizzle extra honey over the carrots before serving.
  • For a vegan version, replace the feta cheese with a plant-based alternative.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
