Description

This classic Irish Soda Bread is a no-yeast, no-fuss rustic loaf made with just four ingredients. With its crispy crust and tender interior, it’s a quick and healthy meal solution perfect for busy weeknights or a cozy weekend bake.

Ingredients

Scale
  • 4 cups all-purpose flour, plus extra for dusting
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 ¾ cups buttermilk

Instructions

  1. Preheat the oven and prep the baking sheet: Set your oven to 425°F (220°C). Line a baking sheet with parchment paper or dust it lightly with flour.
  2. Mix the dry ingredients: In a large bowl, whisk together the flour, baking soda, and salt until fully combined.
  3. Add the buttermilk: Make a well in the center of the dry mixture and pour in the buttermilk. Use a fork to gently stir until a soft dough forms. The dough should come together easily but not feel too sticky.
  4. Shape the loaf: Turn the dough out onto a floured surface and gently knead just a few times—only enough to shape it into a round loaf. Avoid over-kneading to maintain a tender texture.
  5. Score the top: Transfer the loaf to the baking sheet and use a sharp knife to cut a deep “X” into the top of the dough. This helps the center cook evenly and gives the bread its traditional look.
  6. Bake the bread: Place in the preheated oven and bake for 30–40 minutes, or until golden brown. The bread should sound hollow when tapped on the bottom. Let cool on a wire rack for at least 10 minutes before slicing.

Notes

  • To add sweetness, mix in 1–2 tablespoons of sugar or try raisins or dried cranberries.
  • For a savory version, add chopped herbs or caraway seeds.
  • This bread pairs beautifully with soups, stews, and even cheese boards.
  • Toast leftovers the next day for breakfast or freeze slices for future meals.
