- 1 cup sugar-free BBQ sauce
- 2 tablespoons ranch dressing seasoning

- 1/4 teaspoon black pepper
- 2 pounds cooked boneless skinless chicken breast or thighs, cubed or shredded
- 8 slices cooked bacon, chopped
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- Green onions, for garnish
Instructions
- Preheat oven to 350°F (175°C).
- In a large mixing bowl, combine softened cream cheese, sugar-free BBQ sauce, ranch dressing seasoning, salt, and pepper. Mix until smooth.
- Fold in the cooked chicken, chopped bacon, and 1/2 cup each of cheddar and Monterey Jack cheeses until evenly coated.
- Spread the mixture evenly into a greased casserole dish.
- Top with the remaining cheddar and Monterey Jack cheeses, along with extra bacon if desired.
- Cover the casserole dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 6–8 minutes, until the cheese is melted and bubbling.
- Garnish with green onions and a drizzle of BBQ sauce before serving.
Notes
- For a golden-brown top, broil the casserole for the last 1–2 minutes.
