Description

Keto BBQ Chicken Casserole is a cheesy, smoky, and satisfying low-carb dish made with tender chicken, sugar-free BBQ sauce, crispy bacon, and melted cheese. Perfect for weeknights, family dinners, or meal prep, this keto-friendly casserole is quick, customizable, and full of flavor.


Ingredients

  • 8 ounces cream cheese, softened
  • 1 cup sugar-free BBQ sauce
  • 2 tablespoons ranch dressing seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 pounds cooked boneless skinless chicken breast or thighs, cubed or shredded
  • 8 slices cooked bacon, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Green onions, for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine softened cream cheese, sugar-free BBQ sauce, ranch dressing seasoning, salt, and pepper. Mix until smooth.
  3. Fold in the cooked chicken, chopped bacon, and 1/2 cup each of cheddar and Monterey Jack cheeses until evenly coated.
  4. Spread the mixture evenly into a greased casserole dish.
  5. Top with the remaining cheddar and Monterey Jack cheeses, along with extra bacon if desired.
  6. Cover the casserole dish with foil and bake for 25 minutes.
  7. Remove the foil and bake for an additional 6–8 minutes, until the cheese is melted and bubbling.
  8. Garnish with green onions and a drizzle of BBQ sauce before serving.

Notes

  • For a golden-brown top, broil the casserole for the last 1–2 minutes.
  • Always cook chicken before adding to the casserole for food safety.
  • Store leftovers in an airtight container in the refrigerator for up to 4–5 days.
  • To freeze, assemble without baking, wrap tightly, and store for up to 2 months.
