Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add sliced kielbasa and cook until browned, about 5–7 minutes. Remove and set aside.
  2. Sauté chopped onion and garlic in the same pot for 3–4 minutes until soft and fragrant.
  3. Add diced potatoes and chicken broth, stir, bring to a boil, then reduce heat and simmer for 10–15 minutes until potatoes are tender.
  4. Whisk flour into milk (if using) and slowly pour into the soup, stirring to avoid lumps. Stir in heavy cream and simmer for 5–10 minutes.
  5. Return cooked kielbasa to the pot, add thyme, salt, and pepper, and simmer for another 5 minutes to meld flavors.
