Ingredients
- All-purpose flour
- Baking powder
- Salt
- Butter
- Sugar
- Eggs
- Vanilla extract
- Lemon zest
- Lemon juice
- Lavender (food-grade)
- Milk
Instructions
- Preheat your oven to 350°F (175°C) and prepare your loaf pan by greasing and flouring or lining it with parchment paper.
- In a medium-sized bowl, whisk together the flour, baking powder, and salt.
- In another bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract, lemon zest, and lemon juice.
- Gradually add the flour mixture to the butter mixture, alternating with the milk, mixing just until incorporated.
- Fold in the dried lavender flowers.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- If the loaf browns too quickly, loosely cover it with foil and continue baking.
- Be careful not to overmix the batter to maintain a light, tender loaf.
- Lavender is potent, so start with a small amount and adjust to your preference.
- For a dairy-free version, substitute coconut oil and almond milk.
