Description

A delightful and aromatic Lemon Lavender Loaf that’s easy to make and perfect for any occasion. Its bright lemon flavor and floral lavender notes make it a unique treat.

Ingredients

  • All-purpose flour
  • Baking powder
  • Salt
  • Butter
  • Sugar
  • Eggs
  • Vanilla extract
  • Lemon zest
  • Lemon juice
  • Lavender (food-grade)
  • Milk

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your loaf pan by greasing and flouring or lining it with parchment paper.
  2. In a medium-sized bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract, lemon zest, and lemon juice.
  6. Gradually add the flour mixture to the butter mixture, alternating with the milk, mixing just until incorporated.
  7. Fold in the dried lavender flowers.
  8. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  9. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • If the loaf browns too quickly, loosely cover it with foil and continue baking.
  • Be careful not to overmix the batter to maintain a light, tender loaf.
  • Lavender is potent, so start with a small amount and adjust to your preference.
  • For a dairy-free version, substitute coconut oil and almond milk.
