Ingredients
Scale
- 1 pre-baked pie crust (store-bought or homemade)
- 1 cup sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 1 cup water
- 1/2 cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 4 large eggs, beaten
- 2 tablespoons butter
Instructions
- Preheat the oven to 350°F (175°C). Prepare the pie crust and let it cool if using a homemade version.
- In a saucepan, combine sugar, cornstarch, salt, and water. Stir over medium heat until the mixture thickens.
- Add the lemon juice and zest to the thickened mixture. Stir and bring it to a simmer.
- In a separate bowl, whisk the eggs, then gradually temper the eggs with a spoonful of the hot mixture, stirring constantly. Pour the egg mixture into the saucepan.
- Cook the mixture for 1–2 minutes, until thickened further. Remove from heat and stir in the butter until melted and smooth.
- Pour the lemon filling into the cooled pie crust. Let it set at room temperature for 30 minutes, then refrigerate for at least 3 hours.
- Once set, serve chilled, optionally topped with whipped cream or fresh lemon slices.
Notes
- Ensure the lemon filling is thick enough before adding the eggs to prevent curdling.
- Let the pie chill for at least 3 hours for the filling to fully set.
- If you want extra texture, you can top the pie with meringue or whipped cream before serving.
