Description

This lemon thyme cake is a delightful treat that combines the refreshing zing of lemons with the earthy aroma of thyme. The cake is light, easy to prepare, and offers a unique twist on traditional cakes, making it perfect for any occasion.

Ingredients

Scale
  • 2 lemons (zested and juiced)
  • 2 tablespoons fresh thyme (chopped)
  • 1 cup unsalted butter (room temperature)
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients.
  6. Stir in the lemon zest, lemon juice, and fresh thyme leaves.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. Once cooled, frost or glaze with your preferred topping (optional) and garnish with additional fresh thyme sprigs or lemon slices.

Notes

  • Use fresh thyme for the best flavor. If using dried thyme, use about 1/3 of the amount.
  • Ensure the baking powder is fresh for optimal rise.
  • The cake can be stored at room temperature for up to 3 days or refrigerated for up to a week.
  • If you prefer a sweeter cake, consider adding a lemon glaze or frosting on top.
