Description

  • 1 Whole White Onion, cubed
  • 28 oz Tomatoes, peeled and chopped
  • 6 oz Light Beer
  • 2 cups Beef Broth
  • 2.5 tbsp Minced Garlic
  • 2 tbsp Chipotle Purée
  • 2 tbsp Guajillo Chili Powder
  • 1.5 tbsp Ground Cumin
  • 1.5 tbsp Garlic Powder
  • 1 tbsp Black Pepper
  • 1 tbsp Kosher Salt
  • 34 lbs Cooked Fries (store-bought or homemade)
  • 2 cups Shredded Cheddar Cheese
  • Diced Red Onions, for garnish
  • Sliced Jalapeños, for garnish
  • Chopped Cilantro, for garnish
  • Sour Cream, for garnish

Instructions

  1. Preheat a medium heat fire for direct cooking (around 350°F). In a large Dutch oven, add oil and heat for 2 minutes. Add ground beef and cook for 2.5-3 minutes, browning it. Remove and set aside.
  2. In the same Dutch oven, add chopped onions and minced garlic. Cook for about 2 minutes, then add guajillo chili powder, ground cumin, garlic powder, black pepper, and kosher salt. Stir for 1 minute to coat everything evenly.
  3. Return the beef to the Dutch oven. Add beef broth, chipotle purée, and chopped tomatoes. Stir well and cover. Reduce heat to 300-325°F and simmer for 1.5-2 hours, stirring occasionally, until chili thickens.
  4. While the chili is simmering, cook your fries until crispy and golden. You can use store-bought fries or homemade fries.
  5. Once the chili is ready, arrange fries on a serving platter. Sprinkle with shredded cheddar cheese, then top with chili.
  6. Garnish with diced red onions, sliced jalapeños, chopped cilantro, and a dollop of sour cream. Serve and enjoy immediately!

Notes

  • For a thicker chili, simmer it for a little longer. Add more beef broth if you prefer a thinner chili.
