Ingredients

  • 1 (32-ounce) bag Tater Tots
  • 2 cups shredded cheddar cheese
  • 6 slices cooked and crumbled bacon
  • 8 ounces lean ground beef (optional) or 2 cups leftover taco meat
  • 1 tablespoon taco seasoning (optional)
  • 1 cup diced fresh tomatoes
  • 4 green onions, sliced
  • ½ cup sour cream

Instructions

  1. Preheat the oven to 450°F (230°C) and line a large baking sheet with parchment paper.
  2. If using ground beef, cook it in a skillet over medium-high heat until browned, breaking it apart. Drain excess fat.
  3. Stir in taco seasoning and ¼ cup water. Simmer for 4–5 minutes until the liquid evaporates.
  4. Arrange Tater Tots on the baking sheet in a single layer and bake for 20 minutes, turning halfway.
  5. Top with cooked beef, crumbled bacon, and shredded cheddar cheese. Return to the oven for 5 minutes until cheese is melted.
  6. Remove from the oven and top with diced tomatoes, green onions, and sour cream. Serve immediately.

Notes

  • For a spicier version, add jalapeños or hot sauce as a topping.
  • If using the air fryer, cook Tater Tots at 400°F for 15–18 minutes, flipping halfway.
  • To reheat leftovers, bake them in the oven at 375°F for 10–12 minutes to retain crispiness.
  • Feel free to swap ground beef with leftover taco meat or go vegetarian by adding extra veggies.
