Ingredients
Scale
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup butter (softened)
- 1/4 cup granulated sugar
- 1 cup dark brown sugar
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 2 large apples (chopped finely)
- 2 tbsp brown sugar
- 1 tbsp butter
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 2 tbsp butter (for glaze)
- 1/4 cup pure maple syrup
- 1/2 cup powdered sugar
- 1/4 tsp vanilla extract
- 1/8 tsp ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C). Line an 11×7 pan with foil or grease with cooking spray.
- Prepare the apple filling by cooking the chopped apples, brown sugar, butter, vanilla extract, and cinnamon over medium-low heat for about 3-4 minutes. Remove from heat and set aside to cool.
- In a large mixing bowl, cream the butter until light and fluffy. Add the granulated sugar and dark brown sugar, mixing until well combined.
- Add eggs one at a time, beating well after each addition. Stir in salt and vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and cinnamon. Gradually add this dry mixture to the wet ingredients and stir until combined.
- Spread half of the blondie batter evenly into the prepared pan. Top with the apple filling, then cover with the remaining blondie batter.
- Bake for 25-30 minutes or until golden brown and a toothpick inserted comes out clean. Remove from oven and let cool for about 10 minutes.
- For the glaze, melt butter, maple syrup, vanilla extract, and cinnamon over low heat. Remove from heat and sift in powdered sugar, whisking until smooth. Let it cool for 8-10 minutes to thicken.
- Pour the maple glaze over the blondies and allow it to set. Slice into squares and enjoy!
Notes
- Ensure the blondie batter is not overmixed to maintain its chewy texture.
- The apple filling should cool slightly before being added to prevent it from making the batter too soft.
- Store the blondies in an airtight container at room temperature for up to 3 days, or refrigerate for longer storage.
- If using gluten-free flour, a 1:1 gluten-free blend will work well as a substitute for all-purpose flour.
- For an extra touch, add chopped walnuts or pecans to the blondie batter for added texture.
