Description

This Mixed Berry Crisp is an easy and delicious dessert made with a combination of strawberries, blueberries, and blackberries. Topped with a buttery crumble, it’s the perfect summer treat, bursting with fresh fruit flavor and a warm, golden topping. Whether you’re hosting a gathering or enjoying a cozy night in, this recipe will be a hit with everyone!

Ingredients

Scale
  • 5 cups mixed berries (strawberries, blueberries, and blackberries)
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon cinnamon
  • 1 cup all-purpose flour
  • 3/4 cup rolled oats
  • 1/2 cup brown sugar (packed)
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (cold and diced)
  • Vanilla ice cream (optional, for serving)

Instructions

  1. Preheat the oven to 375°F and grease an 8×8 or 7×11-inch baking dish.
  2. Place the mixed berries in the baking dish. Add granulated sugar, cornstarch, and cinnamon to the berries and stir gently to combine.
  3. In a separate bowl, combine the oats, flour, brown sugar, and salt.
  4. Cut the cold butter into the dry mixture until it resembles coarse crumbs. You can use your hands or a pastry cutter for this step.
  5. Evenly sprinkle the streusel topping over the berry mixture in the baking dish.
  6. Bake for 35-40 minutes until the topping turns golden brown and the filling is bubbly.
  7. Allow the crisp to cool for a few minutes before serving. Serve with a scoop of vanilla ice cream if desired.

Notes

  • Make ahead: You can prepare the fruit filling and streusel topping separately and store them in the fridge for up to 3 days. Assemble and bake when you’re ready.
  • Frozen berries: If using frozen berries, no need to thaw them. Just add an additional 3-5 minutes of baking time.
  • Storage: Store leftovers in an airtight container in the fridge for up to 7 days. You can reheat individual servings in the microwave or oven.
  • Substitutes: For a vegan version, use coconut oil or vegan butter. To make it gluten-free, swap the flour with a gluten-free flour blend and use gluten-free oats.
