- 1 lb (450 g) cremini or button mushrooms, sliced

- 1 tbsp Worcestershire sauce
- 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)

- 1 cup sour cream
- 12 oz (340 g) egg noodles
- Salt, to taste
- Black pepper, to taste
- 2 tbsp fresh parsley, chopped
Instructions
- Cook the egg noodles according to the package directions until al dente. Drain and set aside.
- Heat the butter and olive oil in a large skillet over medium-high heat.
- Add the sliced mushrooms and cook for 8-10 minutes until browned and most of the moisture has evaporated.
- Stir in the diced onion and cook for 4-5 minutes until softened.
- Add the garlic, thyme, and paprika, then cook for 1 minute until fragrant.
- Sprinkle the flour over the vegetables and stir continuously for about 1 minute.
- Slowly whisk in the vegetable broth, then stir in the Dijon mustard and Worcestershire sauce.
- Bring the sauce to a gentle simmer and cook for about 5 minutes until slightly thickened.
- Reduce the heat to low and stir in the sour cream until smooth and creamy.
- Season with salt and black pepper to taste.
- Toss the cooked egg noodles with the sauce or spoon the stroganoff over the noodles. Garnish with fresh parsley and serve immediately.

- Do not overcrowd the mushrooms while cooking to achieve proper browning.
