Description
Nectarine cobbler is a delicious, easy-to-make dessert that highlights the sweetness of fresh nectarines and is topped with a golden, buttery crust. It’s the perfect summer dessert to enjoy with a scoop of vanilla ice cream or freshly whipped cream.
Ingredients
Scale
- 7–8 fresh nectarines (peeled and sliced)
- 1/3 cup sugar
- 1 tablespoon butter (optional)
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 12 tablespoons (1 1/2 sticks) cold butter, cubed
- 3/4 cup heavy cream or buttermilk
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, melt 1 tablespoon of butter over medium heat. Add the sugar, sliced nectarines, and cornstarch. Stir and cook for 7-8 minutes until the mixture thickens.
- Transfer the nectarine mixture to a 2-2 1/2 qt baking dish.
- For the topping, mix the flour, baking powder, salt, and sugar in a large bowl.
- Cut the cold butter into the flour mixture until it resembles coarse crumbs.
- Add the heavy cream or buttermilk to the flour mixture and stir until it forms a dough.
- Spoon the cobbler topping over the nectarines. Leave gaps as the topping will puff up during baking.
- Sprinkle sugar over the topping for added crunch.
- Bake for 35-42 minutes or until the topping is golden and the fruit is bubbling.
- Let the cobbler cool slightly before serving warm with vanilla ice cream or whipped cream.
Notes
- If using frozen nectarines, thaw and drain them before cooking to avoid a watery filling.
- Peaches can be substituted for nectarines if preferred.
- Leftovers can be stored in the fridge for 2-3 days and reheated in the oven.
- For a richer topping, you can use heavy cream instead of buttermilk.
