Instructions
- Preheat oven to 350°F. Line a 9-inch square pan with parchment paper.
- Cream together softened butter, granulated sugar, and brown sugar using an electric mixer for 2-3 minutes, until the mixture is light and fluffy.
- Beat in the eggs one at a time, followed by the molasses. Mix well.
- In a separate bowl, whisk together flour, baking soda, cinnamon, ginger, salt, allspice, and cloves. Gradually add this dry mixture to the wet ingredients, mixing until fully combined.
- Carefully mix in the hot coffee, starting with a spoon to prevent splattering.
- Pour the batter into your prepared baking pan, smoothing the top with a spatula.
- Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Let the gingerbread cool completely before serving.
