  • 1/2 tsp salt
  • 1/4 tsp ground allspice
  • 1/4 tsp ground cloves
  • 2/3 cup hot brewed coffee (or hot water)
  • Confectioners’ sugar for dusting

Instructions

  1. Preheat oven to 350°F. Line a 9-inch square pan with parchment paper.
  2. Cream together softened butter, granulated sugar, and brown sugar using an electric mixer for 2-3 minutes, until the mixture is light and fluffy.
  3. Beat in the eggs one at a time, followed by the molasses. Mix well.
  4. In a separate bowl, whisk together flour, baking soda, cinnamon, ginger, salt, allspice, and cloves. Gradually add this dry mixture to the wet ingredients, mixing until fully combined.
  5. Carefully mix in the hot coffee, starting with a spoon to prevent splattering.
  6. Pour the batter into your prepared baking pan, smoothing the top with a spatula.
  7. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Let the gingerbread cool completely before serving.
