Instructions
- Preheat the oven to 350°F (177°C). Grease and line the bottom of a 9-inch springform or cake pan with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate bowl, beat the sugar and orange zest together until the mixture resembles wet sand.
- Add the eggs to the sugar mixture, whisking on low until combined, then increase the speed and whip for 4-5 minutes until light and fluffy.
- Gradually stream in the olive oil, continuing to whisk on high speed until fully incorporated.
- Add the orange juice and milk to the batter, then mix in the dry ingredients. Stir until just combined.
- Pour the batter into the prepared pan. Optionally, sprinkle granulated sugar on top for a crispy crust.
- Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool the cake in the pan for 15-20 minutes, then transfer to a wire rack to cool completely.
