Description

Instructions

  1. Preheat the oven to 350°F (177°C). Grease and line the bottom of a 9-inch springform or cake pan with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate bowl, beat the sugar and orange zest together until the mixture resembles wet sand.
  4. Add the eggs to the sugar mixture, whisking on low until combined, then increase the speed and whip for 4-5 minutes until light and fluffy.
  5. Gradually stream in the olive oil, continuing to whisk on high speed until fully incorporated.
  6. Add the orange juice and milk to the batter, then mix in the dry ingredients. Stir until just combined.
  7. Pour the batter into the prepared pan. Optionally, sprinkle granulated sugar on top for a crispy crust.
  8. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Cool the cake in the pan for 15-20 minutes, then transfer to a wire rack to cool completely.
