Description

These peach crumble bars are a beginner-friendly dessert made with juicy peaches, a buttery oat crust, and crumble topping. Simple, quick, and delicious.


Ingredients

  • 1 cup all-purpose flour (140g)
  • 1 1/3 cups rolled oats (130g)
  • 3/4 cup granulated sugar (155g)
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt (optional)
  • 2/3 cup unsalted butter, melted and cooled (150g)
  • 2 cups peaches, peeled and chopped (450g)
  • 2 tablespoons granulated sugar (30g)
  • 2 teaspoons cornstarch
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon almond extract

Instructions

  1. Preheat oven to 350°F (177°C) and line an 8-inch square baking pan with parchment paper.
  2. Peel and chop peaches into 1/2- to 1-inch pieces. Mix with lemon juice and almond extract, then toss with cornstarch and sugar. Set aside.
  3. In a separate bowl, mix flour, oats, sugar, cinnamon, and salt (if using). Add melted butter and stir until crumbly.
  4. Press two-thirds of the dough mixture into the bottom of the prepared pan to form a crust.
  5. Spread peach mixture over the crust, avoiding excess liquid. Reserve liquid to thicken into a sauce if desired.
  6. Sprinkle remaining dough over peaches, pressing lightly for crumble texture.
  7. Bake for 33–35 minutes until top is golden brown and crumbles are crisp.
  8. Cool at room temperature for 1 hour, then refrigerate for 1.5 hours before slicing.

Notes

  • Use frozen or canned peaches if fresh are unavailable—just drain well.
  • Blanch peaches for easy peeling if needed.
  • Reserve peach juices to make a drizzle sauce by simmering until thickened.
  • Bars slice cleanly after fully cooling in the fridge.
