Description
These peach crumble bars are a beginner-friendly dessert made with juicy peaches, a buttery oat crust, and crumble topping. Simple, quick, and delicious.

- 1 cup all-purpose flour (140g)
- 1 1/3 cups rolled oats (130g)
- 3/4 cup granulated sugar (155g)
- 1 teaspoon cinnamon
- 1/4 teaspoon salt (optional)
- 2/3 cup unsalted butter, melted and cooled (150g)
- 2 cups peaches, peeled and chopped (450g)
- 2 tablespoons granulated sugar (30g)
- 2 teaspoons cornstarch
- 1 teaspoon fresh lemon juice
- 1 teaspoon almond extract
Instructions
- Preheat oven to 350°F (177°C) and line an 8-inch square baking pan with parchment paper.
- Peel and chop peaches into 1/2- to 1-inch pieces. Mix with lemon juice and almond extract, then toss with cornstarch and sugar. Set aside.
- In a separate bowl, mix flour, oats, sugar, cinnamon, and salt (if using). Add melted butter and stir until crumbly.
- Press two-thirds of the dough mixture into the bottom of the prepared pan to form a crust.
- Spread peach mixture over the crust, avoiding excess liquid. Reserve liquid to thicken into a sauce if desired.
- Sprinkle remaining dough over peaches, pressing lightly for crumble texture.
- Bake for 33–35 minutes until top is golden brown and crumbles are crisp.
- Cool at room temperature for 1 hour, then refrigerate for 1.5 hours before slicing.
Notes
- Use frozen or canned peaches if fresh are unavailable—just drain well.
- Blanch peaches for easy peeling if needed.
- Reserve peach juices to make a drizzle sauce by simmering until thickened.
- Bars slice cleanly after fully cooling in the fridge.
