- 1/2 cup brown sugar, packed
- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda

- 1/2 teaspoon ground cinnamon
- 1 1/2 cups chopped peaches (fresh, canned, or frozen)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease well.
- In a large bowl or stand mixer, mix the sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
- In a separate bowl, sift together the flour, baking soda, salt, and cinnamon. Slowly mix into the wet ingredients until just combined.
- Gently fold in the chopped peaches with a spatula, being careful not to overmix.
- Scoop the batter into the prepared muffin cups, filling each about 3/4 full.
- Bake for 20–22 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- If using canned peaches, drain and pat dry to prevent soggy muffins.
- Do not overmix the batter to keep muffins light and tender.
- You can substitute oil with applesauce or mashed banana for a lower-fat option.
- Frozen peaches can be used directly from frozen without thawing.
