Ingredients
Scale
- 1 cup creamy peanut butter
- 4 tablespoons unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
- 1 teaspoon coconut oil (optional, for smoother chocolate coating)
Instructions
- Combine the peanut butter mixture: In a large mixing bowl, stir together the peanut butter, softened butter, powdered sugar, and vanilla extract until well combined. The mixture should form a dough-like consistency. If it’s too soft, add a bit more powdered sugar to firm it up.
- Shape into balls: Scoop out small portions of the peanut butter mixture and roll them into balls about the size of a tablespoon. Place them on a parchment-lined baking sheet and chill in the refrigerator for at least 30 minutes to firm up.
- Melt the chocolate: Place the chocolate chips in a microwave-safe bowl and heat in 20-second intervals, stirring in between, until fully melted and smooth. If needed, stir in a teaspoon of coconut oil to thin out the chocolate for easier dipping.
- Coat the peanut butter balls: Using a fork or toothpick, dip each chilled peanut butter ball into the melted chocolate, ensuring it is evenly coated. Allow any excess chocolate to drip off before placing the coated ball back onto the parchment-lined baking sheet.
- Set the chocolate coating: Once all the peanut butter balls are coated, refrigerate them for another 30 minutes until the chocolate is fully set.
Notes
- If using natural peanut butter, be sure to stir it well before measuring to prevent excess oil from making the dough too soft.
- For a crunchier texture, use crunchy peanut butter or mix in crushed graham crackers.
- Add a pinch of sea salt on top of each coated peanut butter ball before the chocolate sets for an extra flavor boost.
- Store in an airtight container in the fridge for up to two weeks or freeze for up to three months.
