- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 can (15 oz) crushed pineapple, well-drained
- 1 cup sour cream
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a medium bowl, mix flour and sugar. Cut in softened butter until the mixture resembles coarse crumbs. Press the crust mixture evenly into the bottom of the prepared pan.
- Bake the crust for about 15 minutes until lightly golden. Remove from the oven and set aside.
- In a separate bowl, combine drained crushed pineapple, sour cream, sugar, eggs, and vanilla extract. Mix until smooth.
- Pour the pineapple mixture evenly over the pre-baked crust and spread it out with a spatula.
- Bake for 25–30 minutes, or until the edges are golden and the center is slightly jiggly. Let the bars cool completely in the pan.
- Once cool, dust with powdered sugar, slice into squares, and serve.

- For a gluten-free version, use a 1:1 gluten-free baking flour.
- Chilling the bars before slicing helps achieve cleaner cuts.
