  • 8 oz (226 g) cream cheese, softened
  • 1 cup (120 g) powdered sugar
  • 8 oz (226 g) whipped topping, divided
  • 2 packages (3.4 oz / 96 g each) instant pistachio pudding mix
  • 3 cups (720 ml) cold whole milk
  • 1/4 cup (30 g) chopped pistachios, optional for garnish

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine 1 cup (120 g) all-purpose flour and 1/2 cup (113 g) melted unsalted butter until crumbly. Press evenly into a 9×13-inch baking dish to form the crust.
  2. Bake the crust for 15 minutes or until lightly golden. Remove from oven and allow to cool completely.
  3. In a large bowl, beat 8 oz (226 g) softened cream cheese with 1 cup (120 g) powdered sugar until smooth and creamy. Fold in 1 cup (about 113 g) of the whipped topping until light and fluffy.
  4. Spread the cream cheese mixture evenly over the cooled crust.
  5. In another bowl, whisk together 2 packages (3.4 oz / 96 g each) instant pistachio pudding mix with 3 cups (720 ml) cold milk for about 2 minutes until thickened. Let stand 3–5 minutes to fully set.
  6. Spread the pistachio pudding layer gently over the cream cheese layer.
  7. Top with the remaining whipped topping (about 1 cup / 113 g), spreading evenly to cover.
  8. Refrigerate for at least 4 hours, or overnight, until fully set. Garnish with 1/4 cup (30 g) chopped pistachios before slicing and serving.
