Description
These homemade Pop Tarts feature a flaky buttery pastry, sweet fruit filling, and simple vanilla icing. They are fresher, more flavorful, and customizable compared to store-bought toaster pastries, making them perfect for breakfast, snacks, or dessert.
Ingredients
- All-purpose flour – 2 1/2 cups
- Unsalted butter, cold and cubed – 1 cup
- Granulated sugar – 2 tablespoons
- Salt – 1 teaspoon
- Cold water – 6 to 8 tablespoons
- Fruit jam or preserves – 3/4 cup
- Egg – 1 large
- Powdered sugar – 1 cup
- Milk – 2 tablespoons
- Vanilla extract – 1/2 teaspoon
Instructions
- In a large bowl, mix flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
- Add cold water gradually and mix just until the dough comes together.
- Divide dough in half, flatten into discs, wrap, and refrigerate for at least 30 minutes.
- Roll out one dough disc on a floured surface and cut into equal rectangles.
- Place a spoonful of jam in the center of half the rectangles, leaving space around the edges.
- Brush edges with beaten egg, top with remaining rectangles, and seal with a fork.
- Transfer to a lined baking sheet and chill for 15 minutes.
- Bake at 375°F (190°C) for 20–25 minutes until golden.
- Whisk powdered sugar, milk, and vanilla. Ice cooled Pop Tarts and let set before serving.

- Use thick jam to prevent leaking during baking.
- Chill dough and assembled Pop Tarts for best flaky texture.
