Description

These Prosciutto Asparagus Puff Pastry Bundles are a quick and elegant appetizer perfect for brunches, holidays, or special gatherings. Crispy puff pastry wraps around tender asparagus, savory prosciutto, and melted Gruyere cheese, creating a flavorful bite-sized treat that’s easy to make and even easier to impress with.

Ingredients

Scale
  • 1 bunch asparagus (1216 ounces), ends trimmed
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 2 sheets frozen puff pastry, thawed
  • 8 ounces Gruyere cheese, shredded
  • 12 slices prosciutto
  • 1 egg, beaten

Instructions

  1. Preheat the oven: Set your oven to 425°F and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Prepare the puff pastry: Lightly flour a work surface and roll out the puff pastry into a large rectangle, roughly twice its original size. Trim the edges for an even shape, then cut into six equal squares using a sharp knife or pizza cutter.
  3. Season the asparagus: In a bowl, toss the trimmed asparagus with olive oil, salt, and black pepper to coat evenly. This step enhances flavor and helps the asparagus cook evenly inside the pastry.
  4. Assemble the bundles: Place a slice of prosciutto on each puff pastry square, folding it in half if necessary. Lay 3-4 asparagus spears on top, then sprinkle with 1-2 tablespoons of shredded Gruyere cheese.
  5. Wrap and seal: Lift two opposite corners of the puff pastry squares and bring them together over the asparagus, pressing gently to seal. If the pastry doesn’t stick, use a small dab of beaten egg as glue.
  6. Apply egg wash: Brush the tops of the pastry bundles with the beaten egg to create a golden, glossy finish once baked. Sprinkle with additional salt and pepper if desired.
  7. Bake the bundles: Transfer to the prepared baking sheet and bake for 12-15 minutes, or until the puff pastry is golden brown and crispy.
  8. Serve warm: Remove from the oven and let cool for a few minutes before serving. Enjoy immediately for the best texture and flavor.

Notes

  • To make ahead, assemble and refrigerate for up to 4 hours before baking.
  • For extra crispiness, bake on a wire rack over a baking sheet to allow air circulation.
  • Try different cheeses like feta, brie, or cheddar for unique flavor variations.
  • If using frozen asparagus, thaw and pat dry before assembling to prevent excess moisture.
