Description

This Pumpkin-Shaped Cheeseball is the perfect fall appetizer, combining creamy, ranch-style cheese filling with a festive pumpkin shape. It’s an easy-to-make and delicious addition to any Halloween or Thanksgiving celebration.


Ingredients

  • 8 oz cream cheese (softened)
  • 8 oz vegetable cream cheese
  • 2 tablespoons Hidden Valley Spicy Ranch mix (or regular ranch)
  • 3 green onions (sliced, green parts only)
  • 1 red pepper (finely diced, save the stem)
  • 2 cups freshly shredded sharp cheddar cheese (divided)

Instructions

  1. Finely chop the green onions and red pepper. Save the stem of the red pepper for the pumpkin stem.
  2. In a stand mixer or with an electric mixer, combine the cream cheese and vegetable cream cheese until smooth.
  3. Stir in the Hidden Valley Spicy Ranch mix, green onions, red pepper, and one cup of shredded cheddar cheese.
  4. Spread a large sheet of plastic wrap and sprinkle 1/4 cup of the shredded cheddar on it. Place the cheeseball mixture on top.
  5. Sprinkle the remaining shredded cheddar cheese over the mixture, then wrap it tightly with plastic wrap, ensuring it’s sealed.
  6. Wrap the cheeseball with rubber bands or kitchen twine to create the pumpkin shape. Refrigerate for at least 2 hours or overnight.
  7. Remove the rubber bands and plastic wrap, then gently push the red pepper stem into the top of the cheeseball.
  8. Serve with crackers, veggies, or your favorite dippables.

Notes

  • Make sure to use freshly grated cheddar cheese for the best texture.
  • The cheeseball can be made ahead of time and stored in the fridge for up to 3 days.
  • If you prefer a milder version, use the regular Hidden Valley Ranch mix instead of the spicy version.
  • For a plant-based option, substitute vegan cream cheese and dairy-free cheddar cheese.
