  • 2 cups white chocolate chips
  • 1 cup pumpkin spice chips

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium mixing bowl, whisk together the flour, pumpkin spice, baking soda, and salt. Set aside.
  3. In a stand mixer, cream the butter, brown sugar, and granulated sugar on medium speed for about 5 minutes until light and fluffy.
  4. Add the eggs and vanilla extract to the butter mixture, mixing until just combined.
  5. Slowly add the flour mixture to the wet ingredients, mixing on low until fully incorporated.
  6. Fold in the white chocolate chips and pumpkin spice chips until evenly distributed.
  7. Scoop about two tablespoons of dough onto the prepared baking sheet, spacing the dough about two inches apart.
  8. Bake for 10 to 14 minutes or until the edges are golden brown.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
