Description
Raspberry Cheesecake Overnight Oats is a creamy, no-cook breakfast made with rolled oats, Greek yogurt, cream cheese, and fresh raspberries. It delivers a dessert-like cheesecake flavor in a healthy, make-ahead jar that’s perfect for busy mornings, meal prep, and a nutritious start to the day.
Ingredients
Scale
- 1/2 cup rolled oats
- 1/2 cup milk (dairy or plant-based)
- 1/3 cup Greek yogurt
- 2 tablespoons cream cheese, softened
- 1/2 cup fresh raspberries (plus extra for topping)
- 1 tablespoon chia seeds
- 1–2 tablespoons maple syrup or honey
- 1/2 teaspoon vanilla extract
Instructions
- In a jar or bowl, combine rolled oats, chia seeds, and milk, stirring well until evenly mixed.
- Add Greek yogurt, softened cream cheese, vanilla extract, and maple syrup, then mix until smooth and creamy.
- Gently fold in most of the raspberries, reserving a few for topping.
- Cover the jar or bowl with a lid or plastic wrap.
- Refrigerate overnight or for at least 6 hours to allow the oats to soften and absorb the liquid.
- In the morning, stir the mixture and adjust consistency with a splash of milk if needed.
- Top with remaining raspberries and serve chilled.
Notes
- Rolled oats work best for the ideal creamy yet slightly chewy texture.
- Frozen raspberries can be used and will release extra juice as they thaw overnight.
- Adjust sweetness based on your preference and the tartness of the berries.
- For extra creaminess, mix cream cheese and yogurt thoroughly before combining with oats.
- Store in an airtight container in the refrigerator for up to 3 days.
