- 1 large egg
- 1 cup whole milk
- 1 ½ cups breadcrumbs (plain or seasoned)

- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Oil for frying (vegetable, canola, or peanut oil)

- Prepare the cheese mixture: In a bowl, mix the shredded Pepper Jack cheese with finely diced jalapeños. Roll the mixture into small balls, about 1.5 inches in diameter. Place them on a baking sheet and freeze for 30–60 minutes. This helps them hold their shape during frying.
- Set up the breading station: In three separate bowls, place the flour in one, the whisked egg mixed with milk in another, and the breadcrumbs mixed with cayenne, paprika, and garlic powder in the last.
- Coat the cheese balls: Roll each frozen cheese ball first in the flour, then dip it in the egg mixture, and finally coat it in the breadcrumb mixture. For extra crispiness, repeat the egg and breadcrumb step to create a thicker coating.
- Heat the oil: In a deep pot or Dutch oven, heat oil to 350°F. Use a thermometer to ensure the correct temperature, as frying at too low a temperature will result in greasy bites, while too high a temperature may cause them to burst.
- Fry the bites: Fry 4–5 cheese balls at a time for 3–4 minutes until they turn golden brown. Avoid overcrowding the pot, as this lowers the oil temperature. Remove them with a slotted spoon and drain them on a paper towel-lined plate.
- Serve warm: Let them cool slightly before serving to avoid burning your mouth. Enjoy them with ranch dressing, spicy mayo, or your favorite dipping sauce.
