Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
- Peel and cut the sweet potatoes into 1-inch cubes.
- In a large bowl, toss the sweet potato cubes with olive oil, minced garlic, dried oregano, salt, and pepper. Make sure every piece is coated evenly.
- Spread the sweet potatoes in a single layer on the prepared baking sheet.
