  • 4 cups egg noodles
  • Salt and pepper to taste

Instructions

  1. Prepare the vegetables: chop the carrots, celery, and onion. Mince the garlic.
  2. Sauté the vegetables: Heat oil in a large pot and sauté the onions, carrots, and celery for 5 minutes until softened. Add garlic and cook for another 1-2 minutes.
  3. Add the broth and seasonings: Pour in the chicken broth, thyme, bay leaves, salt, and pepper, and stir to combine.
  4. Shred the rotisserie chicken and add it to the pot. Then add the egg noodles and bring to a boil.
  5. Simmer: Reduce the heat to a simmer and cook for 10-12 minutes or until the noodles are tender.
