These shrimp stuffed jalapeño poppers are the perfect spicy, creamy appetizer—quick to make, beginner-friendly, and easily customizable for any occasion.

- 12 large jalapeños, halved and seeded
- 12 medium shrimp, peeled and deveined
- 4 oz cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 2 tablespoons green onions, finely chopped
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 1/2 cup breadcrumbs or panko (optional)
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 400°F (200°C). Slice jalapeños in half lengthwise and remove seeds and membranes. Place them on a parchment-lined baking sheet, drizzle with olive oil, and roast for 5 minutes.
- While jalapeños roast, mix cream cheese, shredded cheddar, green onions, garlic powder, salt, and pepper in a bowl until smooth.
- Remove jalapeños from the oven and fill each half with the cheese mixture, smoothing the tops for even baking.
- Place one shrimp in the center of each stuffed jalapeño half.
- Optionally, sprinkle breadcrumbs or panko over the tops for added crunch.
- Bake for 12–15 minutes, until shrimp is cooked through and cheese is bubbly.
Notes
- Use mini sweet peppers instead of jalapeños for a milder version.
- Do not overcook the shrimp—look for a pink color and loose ‘C’ shape.
- Prepare the filling while the jalapeños roast to save time.
- Use a zip-top bag as a piping tool for easy stuffing.
