Description

These shrimp stuffed jalapeño poppers are the perfect spicy, creamy appetizer—quick to make, beginner-friendly, and easily customizable for any occasion.


Ingredients

  • 12 large jalapeños, halved and seeded
  • 12 medium shrimp, peeled and deveined
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons green onions, finely chopped
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1/2 cup breadcrumbs or panko (optional)
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C). Slice jalapeños in half lengthwise and remove seeds and membranes. Place them on a parchment-lined baking sheet, drizzle with olive oil, and roast for 5 minutes.
  2. While jalapeños roast, mix cream cheese, shredded cheddar, green onions, garlic powder, salt, and pepper in a bowl until smooth.
  3. Remove jalapeños from the oven and fill each half with the cheese mixture, smoothing the tops for even baking.
  4. Place one shrimp in the center of each stuffed jalapeño half.
  5. Optionally, sprinkle breadcrumbs or panko over the tops for added crunch.
  6. Bake for 12–15 minutes, until shrimp is cooked through and cheese is bubbly.

Notes

  • Use mini sweet peppers instead of jalapeños for a milder version.
  • Do not overcook the shrimp—look for a pink color and loose ‘C’ shape.
  • Prepare the filling while the jalapeños roast to save time.
  • Use a zip-top bag as a piping tool for easy stuffing.
