- 1/2 cup sliced carrots
- 1 tablespoon minced garlic
- 1 tablespoon Cajun seasoning

- 3 cups chicken broth
- 1 cup milk
- 1/2 cup heavy whipping cream
- 1 cup shredded cheddar cheese
- Green onions, sliced (for garnish)
- Tabasco sauce (optional, for serving)
Instructions
- Heat olive oil in a skillet and brown the sausage slices on both sides.
- Place the potatoes, bell pepper, onion, celery, carrots, garlic, Cajun seasoning, salt, and pepper into the slow cooker.
- Add the browned sausage on top of the vegetables.
- Pour the chicken broth into the slow cooker and stir to combine.
- Cook on high for 3 hours or low for 5 hours.
- Stir in the milk and continue cooking for 1 more hour.
- Add the heavy cream and shredded cheddar cheese, stirring until the cheese melts (about 15 minutes).
- Serve hot, garnished with green onions and a dash of Tabasco sauce if desired.

- Browning the sausage first adds flavor but can be skipped if short on time.
- Yukon gold or red potatoes can be used for a creamier texture.
