Description

  • 1 (13.5 oz) package andouille sausage, sliced into 1/4-inch rounds
  • 4 russet potatoes, peeled and cut into bite-sized pieces
  • 1 cup diced bell pepper (red or green)
  • 1 cup onion, diced
  • 1/2 cup diced celery
  • 1/2 cup sliced carrots
  • 1 tablespoon minced garlic
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 cups chicken broth
  • 1 cup milk
  • 1/2 cup heavy whipping cream
  • 1 cup shredded cheddar cheese
  • Green onions, sliced (for garnish)
  • Tabasco sauce (optional, for serving)

Instructions

  1. Heat olive oil in a skillet and brown the sausage slices on both sides.
  2. Place the potatoes, bell pepper, onion, celery, carrots, garlic, Cajun seasoning, salt, and pepper into the slow cooker.
  3. Add the browned sausage on top of the vegetables.
  4. Pour the chicken broth into the slow cooker and stir to combine.
  5. Cook on high for 3 hours or low for 5 hours.
  6. Stir in the milk and continue cooking for 1 more hour.
  7. Add the heavy cream and shredded cheddar cheese, stirring until the cheese melts (about 15 minutes).
  8. Serve hot, garnished with green onions and a dash of Tabasco sauce if desired.

Notes

  • Browning the sausage first adds flavor but can be skipped if short on time.
  • Yukon gold or red potatoes can be used for a creamier texture.
  • Add extra vegetables like corn, green beans, or spinach for more variety.
