  • 2 large onions, sliced into rings

  • 1 1/2 green bell peppers, chopped
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • Olive oil, as needed

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter or nonstick spray.
  2. Start with a layer of thinly sliced russet potatoes at the bottom of the dish. Drizzle with olive oil for moisture.
  3. Add a layer of browned ground beef over the potatoes, spreading it evenly.
  4. Top the beef with a layer of sliced onions, ensuring the onion rings are separated for even cooking.
  5. Place a layer of sliced tomatoes or spread canned diced tomatoes evenly on top of the onions.
  6. Add chopped green bell peppers on top, then season each layer with kosher salt and freshly ground black pepper.
  7. Cover the casserole tightly with aluminum foil and bake for 2 hours.
  8. After baking, remove the casserole from the oven and allow it to cool slightly before serving.
