Description

This Spring Mix Salad is a fresh, vibrant recipe made with tender baby greens, crisp vegetables, creamy avocado, feta cheese, and a light red wine vinaigrette. It is quick to prepare, easy to customize, and perfect as a healthy side dish or a light main meal.


Ingredients

  • 6 cups spring mix lettuce
  • 1 cup cherry tomatoes, halved
  • 1/2 large English cucumber, sliced
  • 1/4 small red onion, finely chopped
  • 1/3 cup fresh basil and mint, chopped
  • 1/2 cup feta cheese, crumbled
  • 1 ripe avocado, peeled and chopped
  • 1/2 cup red wine vinaigrette

Instructions

  1. Prepare the red wine vinaigrette by blending or whisking together vinegar, olive oil, Dijon mustard, garlic, and seasonings until smooth.
  2. Rinse the spring mix thoroughly and dry completely using a salad spinner or clean towel.
  3. Slice the cherry tomatoes, cucumber, and red onion. Chop the fresh herbs and avocado.
  4. Add the spring mix to a large salad bowl and layer in the tomatoes, cucumber, onion, herbs, avocado, and feta cheese.
  5. Drizzle the vinaigrette around the edges of the bowl and gently toss to evenly coat the ingredients.
  6. Season with salt and freshly cracked black pepper to taste and serve immediately.

Notes

  • Store salad and dressing separately to keep the greens fresh.
  • For milder onion flavor, soak chopped onion in cold water for 5–10 minutes.
