- 6 cups spring mix lettuce
- 1 cup cherry tomatoes, halved
- 1/2 large English cucumber, sliced
- 1/4 small red onion, finely chopped
- 1/3 cup fresh basil and mint, chopped
- 1/2 cup feta cheese, crumbled
- 1 ripe avocado, peeled and chopped
- 1/2 cup red wine vinaigrette
Instructions
- Prepare the red wine vinaigrette by blending or whisking together vinegar, olive oil, Dijon mustard, garlic, and seasonings until smooth.
- Rinse the spring mix thoroughly and dry completely using a salad spinner or clean towel.
- Slice the cherry tomatoes, cucumber, and red onion. Chop the fresh herbs and avocado.
- Add the spring mix to a large salad bowl and layer in the tomatoes, cucumber, onion, herbs, avocado, and feta cheese.
- Drizzle the vinaigrette around the edges of the bowl and gently toss to evenly coat the ingredients.
- Season with salt and freshly cracked black pepper to taste and serve immediately.

- Store salad and dressing separately to keep the greens fresh.
- For milder onion flavor, soak chopped onion in cold water for 5–10 minutes.
