Ingredients
- Fresh strawberries
- Fresh lemon (zest and juice)
- All-purpose flour
- Baking powder
- Sugar
- Salt
- Eggs
- Unsalted butter
- Buttermilk
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- Wash and dry the strawberries, remove stems, and chop into small pieces.
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- In another bowl, whisk eggs, melted butter, lemon juice, and buttermilk together, then add lemon zest.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Fold in the strawberries, making sure they are evenly distributed in the batter.
- Pour the batter into the loaf pan and spread it evenly. Bake for 55-60 minutes or until a toothpick comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Do not overmix the batter to avoid dense bread.
- If using frozen strawberries, thaw and drain excess liquid before adding them to the batter.
- To check doneness, use a toothpick to see if it comes out clean from the center.
- If you prefer a crunchier top, brush the bread with melted butter before baking.
