- 1/2 teaspoon garlic powder
- 2 large eggs, beaten
- Chopped chives or parsley for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the fresh corn kernels, creamed corn, sour cream, shredded cheddar cheese, honey, and melted butter. Stir until well mixed.

- Gradually add the dry ingredients to the wet ingredients and stir gently until just combined. Avoid overmixing.
- Grease a 9×13 inch baking dish with butter or cooking spray. Pour the mixture into the dish and spread it evenly.

- Allow the casserole to cool for 10-15 minutes before slicing and serving. Garnish with chopped chives or parsley if desired.
Notes
- To make ahead, prepare the casserole and refrigerate it overnight. Bake it just before serving.
- If you prefer a dairy-free version, use dairy-free sour cream and plant-based cheese alternatives.
- Frozen corn can be used as a substitute for fresh corn, but make sure to thaw and drain it properly.
- For a gluten-free option, substitute the regular cornmeal with gluten-free cornmeal or a gluten-free flour blend.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
