Description

  • 4 1/2 teaspoons active dry yeast (2 packets)
  • 2 1/2 cups warm milk (110° to 115°F)
  • 1/2 cup good quality honey
  • 8 tablespoons butter, melted (divided)
  • 2 large eggs, room temperature
  • 1 tablespoon kosher salt
  • 89 cups all-purpose flour

Instructions

  1. In a stand mixer bowl, combine yeast, warm milk, and honey. Stir gently and let bloom for about 5 minutes, until bubbly and aromatic.
  2. Add 6 tablespoons melted butter, eggs, and 4 cups of flour. Mix on low using the dough hook until smooth.
  3. Gradually add remaining flour (up to 5 more cups) until the dough is tacky but not sticky. Add salt and knead for 7–9 minutes.
  4. Turn dough onto a floured surface and knead a few turns. Place in a greased bowl with 1 tablespoon melted butter, cover, and let rise for 1 hour or until doubled.
  5. Brush 2 cookie sheets with melted butter. Punch down dough and roll into a 1-inch thick rectangle.
  6. Cut into 48 equal pieces and place on prepared sheets about 1/2 to 1 inch apart. Cover and let rise for 45–60 minutes until nearly doubled.
  7. Preheat oven to 350°F. Bake rolls for 12–15 minutes or until golden brown.
  8. Brush hot rolls with remaining melted butter. Serve warm with cinnamon honey butter if desired.

Notes

  • The dough should be tacky but not sticky; add flour 1 tablespoon at a time if needed.
  • If your kitchen is cold, let dough rise in a warm (100–125°F) oven turned off.
  • Unbaked rolls can be frozen after shaping and thawed overnight before baking.
  • Fully baked rolls freeze well for up to 3 months. Reheat at 300°F before serving.
