Ingredients

Instructions
- Preheat your oven to 325°F (163°C). Line the bottom of a springform pan with parchment paper. Crush Oreo cookies into fine crumbs and mix with melted butter. Press into the pan and bake for 10 minutes. Let cool.
- In a large bowl, beat softened cream cheese until smooth. Add granulated sugar and mix until combined. Add eggs one at a time, mixing gently after each to avoid overmixing.
- Stir in sour cream, then fold in melted dark and semi-sweet chocolate. Mix until fully incorporated and pour the batter over the cooled crust. Smooth the top.
- Bake for 60 minutes or until the center is mostly set but slightly jiggly. Turn off the oven, crack the door, and allow the cheesecake to cool inside for 1 hour. Then refrigerate for at least 4 hours or overnight.
- To make the ganache, heat heavy cream until just simmering and pour over chopped milk chocolate. Let sit for a minute, then stir until smooth. Spread ganache over the chilled cheesecake and let it set for 30 minutes before serving.
