- Prepare the yeast mixture by combining warm milk (1 cup), sugar (1/4 cup), and yeast (1 tbsp) in a small bowl. Stir until the yeast dissolves and let it sit for 10 minutes until frothy.
- Mix the dry ingredients: whisk together all-purpose flour (4 cups), salt (1 tsp), mahleb (1 tsp), and mastic (1/2 tsp) in a large bowl.
- Add the wet ingredients: to the dry ingredients, add the yeast mixture, eggs (2), butter (1/2 cup), and orange zest (1 tbsp). Mix until the dough comes together.
- Knead the dough: turn the dough onto a floured surface and knead for 10 minutes until smooth and elastic. Add more flour if the dough is too sticky.
- Let the dough rise: place the dough in a greased bowl and cover with a towel. Let it rise in a warm place for 1-2 hours, until it doubles in size.
- Shape the dough: punch the dough down and divide it into three portions. Roll each into a long rope and braid them together.
- Final rise: place the braided dough on a baking sheet lined with parchment paper. Cover and let it rise for another 30-45 minutes.
- Bake the Tsoureki: preheat the oven to 350°F (175°C). Brush the top of the bread with an egg wash (1 egg + 1 tbsp water) and sprinkle with sliced almonds (optional) if desired. Bake for 30-35 minutes, or until golden brown.
