- 4 large eggs
- 1/3 cup extra virgin olive oil
- 1 clove garlic, minced or grated
- 4 cups mixed baby spinach and arugula
- Kosher salt and black pepper, to taste
- Zest and juice from 1 lemon
- 1 cup tender herbs (such as cilantro, parsley, basil, and dill)
- 1 Persian cucumber, thinly sliced
- 2 tablespoons salted butter
- 1 teaspoon crushed red pepper flakes
- 1/2 teaspoon paprika
- 1 avocado, sliced
- 2 tablespoons everything bagel spice
- 1 cup feta cheese
- 1/2 cup Greek yogurt
Instructions
- In a food processor, combine feta and Greek yogurt. Pulse until smooth and creamy. Set aside.
- Heat 3 tablespoons of olive oil in a medium skillet over medium-high heat. Add eggs and fry to your liking. Remove from the skillet and set aside.
- Using the same skillet, add 1 tablespoon of olive oil, garlic, and greens. Cook for 2-3 minutes until the greens are just wilted. Remove from heat. Stir in lemon zest, lemon juice, fresh herbs, and cucumber.
- In a small saucepan, melt butter and olive oil. Add crushed red pepper flakes and paprika. Cook for a couple of minutes until fragrant.
- To serve, spread whipped feta in the bottom of bowls or plates. Top with fried eggs, wilted greens, and avocado. Sprinkle avocado with everything bagel spice and drizzle with chile butter. Serve with toasted bread or bagels.
Notes
- For a milder version, reduce the amount of red pepper flakes in the chile butter.
- Use poached eggs for a more traditional Turkish style dish.
- Store leftover whipped feta and chile butter separately in the fridge for up to 3-5 days.
