Ingredients
- Crushed Chocolate Cookies – 2 cups
- Butter (melted) – 1/2 cup
- Cream Cheese (softened) – 8 oz
- Powdered Sugar – 1 cup
- Whipped Topping (like Cool Whip) – 16 oz
- Instant Chocolate Pudding Mix – 2 (3.9 oz) packages
- Milk (cold) – 3 cups
- Caramel Sauce – 1/2 cup (plus extra for drizzling)
- Chopped Pecans – 1 cup
- Mini Chocolate Chips – 1/2 cup
Instructions
- In a bowl, mix crushed chocolate cookies with melted butter until combined and press into the bottom of a 9×13-inch baking dish.
- In another bowl, beat cream cheese until smooth, add powdered sugar, then fold in half of the whipped topping until fluffy. Spread over the crust.
- Whisk instant chocolate pudding mix with cold milk until thickened, then spread over the cream cheese layer.
- Drizzle caramel sauce over the pudding and sprinkle half of the chopped pecans evenly.
- Spread the remaining whipped topping over the caramel and pecans, smoothing the surface carefully.
- Top with mini chocolate chips and the remaining chopped pecans. Drizzle with extra caramel sauce if desired.
- Cover and refrigerate for at least 4 hours or overnight before serving.
Notes
- If the crust feels too crumbly, add an extra tablespoon of melted butter.
- Let cream cheese soften at room temperature for easier mixing.
- Allow pudding to thicken properly before layering to prevent runniness.
- Use a rubber spatula for smooth, even layers without disturbing the base.
- Store leftovers covered in the refrigerator for up to 4 days.
