Description

These Ultra Soft Milk Buns are fluffy, buttery, and perfect for beginners. Easy to make in the oven or air fryer with simple pantry ingredients.


Ingredients

  • 5 cups all-purpose flour, sifted
  • 2 large eggs, lightly beaten
  • 2 tbsp butter, room temperature (plus extra for brushing)
  • 2 tbsp sugar (plus 1 tsp)
  • 1 ½ tsp kosher salt
  • 2 ¼ tsp instant yeast (or 1 packet)
  • 1 ¼ cup lukewarm milk
  • 1 tbsp milk (for egg wash)
  • 1 egg yolk (for egg wash)

Instructions

  1. Warm the milk until it reaches about 110°F. Set aside.
  2. In a large mixing bowl, sift in the flour. Add sugar, salt, and instant yeast. Stir to combine.
  3. Lightly beat the eggs and add them to the dry ingredients. Mix until lumps start to form.
  4. Slowly add the lukewarm milk and butter while mixing. Knead for 10–12 minutes until smooth and elastic.
  5. Transfer dough to a floured surface, shape into a ball using the fold-under method, and place in a greased bowl. Cover and let rise for 1 hour.
  6. Punch down the dough and roll into a 12-inch square. Divide into equal portions and roll each piece into a smooth ball.
  7. Place dough balls onto a parchment-lined baking dish or air fryer tray. Cover and let rise again for 45 minutes.
  8. Preheat oven to 325°F or air fryer to 300°F. Mix egg yolk with 1 tbsp milk and gently brush over dough tops.
  9. Bake in oven for 18 minutes or air fryer for 15 minutes until golden brown. Let cool for 10 minutes before serving.

Notes

  • Use a kitchen scale or ruler for even-sized rolls.
  • Do not overheat the milk to avoid killing the yeast.
  • Brush egg wash gently to avoid deflating the dough.
  • Can be made with plant-based milk and vegan butter.
  • Store completely cooled buns in an airtight container for up to 5 days.
