Description

  • ¼ tsp salt

  • ⅓ cup extra-virgin olive oil
  • 1 cup cane sugar
  • 1 tablespoon apple cider vinegar or white vinegar
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch cake pan generously and line the bottom with parchment paper for easy removal.
  2. Peel and slice the oranges into ⅛-¼ inch rounds. If preferred, leave the peels on for extra texture.
  3. Pour melted butter into the pan, swirling it to coat. Sprinkle sugar evenly over the butter, then arrange the orange slices in a circular pattern, overlapping them.
  4. In a large bowl, whisk together the flour, baking powder, and salt.
  5. In a separate bowl, whisk the milk, olive oil, vanilla, sugar, vinegar, and orange zest until well combined.
  6. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  7. Pour the batter evenly over the arranged orange slices in the pan, using a spatula to spread it without disturbing the slices.
  8. Bake for 25-35 minutes, or until golden and a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 5-10 minutes. Run a knife around the edges, then place a plate over the top and carefully invert the cake onto the plate.
  10. If any orange slices stick, simply reposition them back onto the cake.
