Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, combine the vanilla cake mix, eggs, and vegetable oil until a smooth dough forms.
  3. Mix in the vanilla extract and mint extract, starting with a small amount of mint to avoid overpowering the flavor.
  4. Add green food coloring a drop at a time until the desired shade of green is reached.
  5. Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  6. Bake for 9–11 minutes, until the edges are set and the centers remain soft.
