Description

This Air Fryer Carrot Cake is a moist, flavorful dessert that’s quick and easy to make. With a combination of fresh carrots, warm spices, and a smooth cream cheese frosting, this cake is perfect for any occasion. It’s an air fryer twist on the classic carrot cake, ensuring a light and fluffy texture every time.


Ingredients

  • 225 g Self-Raising Flour
  • 150 ml Extra Virgin Olive Oil
  • 150 g Brown Sugar
  • 30 g Granulated Sugar
  • 2 Large Carrots, grated
  • 2 Large Eggs
  • 2 Tbsp Semi-Skimmed Milk
  • 1 tsp Mixed Spice
  • 1 tsp Ground Cinnamon
  • 1 tsp Ground Ginger
  • 1/4 tsp Nutmeg

Instructions

  1. Peel and grate the carrots. Set them aside.
  2. In a bowl, mix self-raising flour, brown sugar, granulated sugar, mixed spice, cinnamon, ginger, and nutmeg.
  3. Create a well in the center of the dry ingredients. Crack in the eggs and add the olive oil. Mix well using a hand mixer.
  4. Gradually add the milk until the batter is smooth and slightly runny.
  5. Pour the batter into a silicone baking pan that fits into the air fryer basket. Smooth the top with a spatula.
  6. Preheat the air fryer to 180°C (360°F) and cook the cake for 15 minutes. Then reduce the temperature to 170°C (340°F) and cook for another 26 minutes, or until a cocktail stick comes out clean.
  7. Let the cake cool completely before frosting.
  8. To make the cream cheese frosting, mix cream cheese, butter, icing sugar, and vanilla essence until smooth.
  9. Once the cake has cooled, level the top with a bread knife, and spread the cream cheese frosting evenly over the cake.

Notes

  • Use silicone baking pans for easier cake removal.
  • Check the cake for doneness by inserting a cocktail stick; it should come out clean.
  • If you prefer a different flavor, you can adjust the spices like doubling the cinnamon or adding more ginger.
