Description

Avocado deviled eggs are a creamy, healthy twist on classic deviled eggs, made with ripe avocado, hard-boiled eggs, and simple seasonings for a fresh and satisfying appetizer.

Instructions

  1. Place the eggs in a saucepan, cover with cold water, and bring to a boil. Remove from heat, cover, and let sit for 10 minutes.
  2. Transfer the eggs to an ice bath and cool completely, then peel.
  3. Slice the eggs in half lengthwise and remove the yolks into a bowl.
  4. Add the avocado flesh, lemon juice, Dijon mustard, garlic, salt, and black pepper to the bowl.
  5. Mash or blend until smooth and creamy, adjusting seasoning to taste.
  6. Spoon or pipe the avocado mixture into the egg white halves.
  7. Garnish with fresh herbs or paprika if desired and serve immediately.
