Description

Baked Balsamic Chicken is a juicy one-pan dinner made with seared chicken breasts, a sweet and tangy balsamic glaze, fresh tomatoes, mozzarella, and basil, all finished in the oven until tender and flavorful.

Ingredients

Scale
  • 2 lb boneless skinless chicken breasts, pounded to even thickness
  • 1/3 cup balsamic vinegar
  • 2 tablespoons honey
  • 4 tablespoons avocado oil or olive oil, divided
  • 2 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 1 tablespoon Dijon mustard
  • 8 oz grape tomatoes, halved
  • 8 oz fresh mozzarella balls (ciliegine or pearls)
  • 2 tablespoons fresh basil, finely chopped
  • 1 teaspoon kosher salt, or to taste
  • 1/2 teaspoon freshly ground black pepper, or to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a medium bowl, whisk together balsamic vinegar, honey, 2 tablespoons oil, minced garlic, Italian seasoning, and Dijon mustard. Season lightly with salt and pepper.
  3. In a separate bowl, combine halved grape tomatoes, fresh mozzarella balls, and chopped basil. Season lightly with salt and pepper and set aside.
  4. Pat the chicken breasts dry and pound to even thickness for uniform cooking.
  5. Heat the remaining 2 tablespoons oil in a large oven-safe skillet over medium-high heat. Season the chicken with salt and pepper on both sides.
  6. Sear the chicken for 1–2 minutes per side until lightly golden brown but not fully cooked.
  7. Pour the balsamic sauce mixture into the skillet and bring to a gentle simmer, scraping up any browned bits from the bottom of the pan.
  8. Remove the skillet from heat and evenly spoon the tomato and mozzarella mixture over the chicken.
  9. Transfer the skillet to the oven and bake uncovered for 18–23 minutes, or until the internal temperature reaches 165°F (74°C).
  10. Remove from the oven and let the chicken rest for 5 minutes before serving. Spoon extra balsamic glaze over the top and garnish with additional basil if desired.

Notes

  • Pounding the chicken ensures even cooking and prevents dry edges.
  • Use fresh mozzarella for the best creamy texture and melt.
  • Do not overbake; use a meat thermometer to check for 165°F internal temperature.
  • Boneless chicken thighs can be substituted; begin checking for doneness at 15–18 minutes.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
