Description
Baked Balsamic Chicken is a juicy one-pan dinner made with seared chicken breasts, a sweet and tangy balsamic glaze, fresh tomatoes, mozzarella, and basil, all finished in the oven until tender and flavorful.

- 2 lb boneless skinless chicken breasts, pounded to even thickness
- 1/3 cup balsamic vinegar
- 2 tablespoons honey
- 4 tablespoons avocado oil or olive oil, divided
- 2 garlic cloves, minced
- 1 teaspoon Italian seasoning
- 1 tablespoon Dijon mustard
- 8 oz grape tomatoes, halved
- 8 oz fresh mozzarella balls (ciliegine or pearls)
- 2 tablespoons fresh basil, finely chopped
- 1 teaspoon kosher salt, or to taste
- 1/2 teaspoon freshly ground black pepper, or to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a medium bowl, whisk together balsamic vinegar, honey, 2 tablespoons oil, minced garlic, Italian seasoning, and Dijon mustard. Season lightly with salt and pepper.
- In a separate bowl, combine halved grape tomatoes, fresh mozzarella balls, and chopped basil. Season lightly with salt and pepper and set aside.
- Pat the chicken breasts dry and pound to even thickness for uniform cooking.
- Heat the remaining 2 tablespoons oil in a large oven-safe skillet over medium-high heat. Season the chicken with salt and pepper on both sides.
- Sear the chicken for 1–2 minutes per side until lightly golden brown but not fully cooked.
- Pour the balsamic sauce mixture into the skillet and bring to a gentle simmer, scraping up any browned bits from the bottom of the pan.
- Remove the skillet from heat and evenly spoon the tomato and mozzarella mixture over the chicken.
- Transfer the skillet to the oven and bake uncovered for 18–23 minutes, or until the internal temperature reaches 165°F (74°C).
- Remove from the oven and let the chicken rest for 5 minutes before serving. Spoon extra balsamic glaze over the top and garnish with additional basil if desired.

- Pounding the chicken ensures even cooking and prevents dry edges.
- Use fresh mozzarella for the best creamy texture and melt.
- Do not overbake; use a meat thermometer to check for 165°F internal temperature.
- Boneless chicken thighs can be substituted; begin checking for doneness at 15–18 minutes.
