Description

  • 1 cup (240 ml) lager or pale ale beer
  • 1/2 cup (120 ml) whole milk
  • 1 teaspoon (5 g) Dijon mustard
  • 1 teaspoon (5 ml) Worcestershire sauce
  • 1/2 teaspoon (2 g) garlic powder
  • 1/2 teaspoon (1 g) paprika
  • 1/4 teaspoon (1 g) salt
  • 1/4 teaspoon (1 g) black pepper

Instructions

  1. Melt the butter in a medium saucepan over medium heat until fully melted.
  2. Whisk in the flour and cook for 1–2 minutes, stirring constantly, until lightly golden and smooth.
  3. Slowly pour in the beer while whisking continuously to prevent lumps. Simmer for 2–3 minutes until slightly thickened.
  4. Add the milk gradually, whisking until the mixture becomes smooth and creamy.
  5. Reduce the heat to low and add the shredded cheddar cheese in small handfuls, stirring until completely melted before adding more.
  6. Stir in Dijon mustard, Worcestershire sauce, garlic powder, paprika, salt, and black pepper.
  7. Continue stirring gently until the dip reaches your desired consistency. If too thick, add a splash of milk. Serve warm.

  • Use freshly shredded cheese for the smoothest texture.
  • Keep the heat low when adding cheese to prevent graininess.
  • A light lager produces a milder flavor, while an amber ale adds depth.
